Freya’s Once & Well is a chardonnay grown in ancient granite-based soils. It’s a wine of place, expressing the essence of Margaret River, with fruit sourced from a few different sites.

Using grapes grown in warmer areas means some tropical flavours come through in the wine, Freya says. “But then some sites are a little cooler and we get those citrus characters. We end up with a lovely, balanced Margaret River Chardonnay,” she says.
What to expect from Freya’s 2017 Once & Well Chardonnay? A nose that is vibrant, rich and enticing with tropical fruits such as lychee and pineapple, some spice, nougat and hints of jasmine. The palate is light and refreshing with a mealy mid-palate and elegant finish. Expect bright citrus fruits, pineapple, lychee and pear; a touch of vanilla and spicy oak
“It’s classical, typical Margaret River,” Freya says. “Full of flavour, some complexity but light on the palate. After having a sip, it’s got that salivating acidity so you just want to go back and have more.”
